Citrus Quinoa

This recipe is derived from the Chicken with Citrus Sauce and Quinoa recipe from Cooking Light Annual Recipes 2015 cookbook.

Ingredients:

  • 1 3/4 cups water
  • 3/4 cup uncooked quinoa
  • 1 1/2 tsp vegetable bouillon
  • 1/3 cup fresh cilantro
  • 1/4 cup orange juice
  • 2 Tbsp lime juice
  • 2 tsp honey
  • 1 Tbsp butter

Kitchenware:

  • Stove
  • Microwave
  • Glass measuring cup
  • Medium saucepan with lid
  • Small saucepan
  • Cutting board

Steps:

  1. Measuring 1 1/4 cups of water.  Bring to a boil in the microwave.  Add 1 tsp of vegetable bouillon.  Stir until dissolved.  Put the bouillon water in the medium saucepan with the quinoa.  Stir and bring to a boil.  Once the water begins to boil, reduce heat to a simmer, cover, and cook for 15 minutes.
  2. While the quinoa cooks, chop 1/3 cup of cilantro.
  3. Microwave 1/2 cup of water until it boils.  Add 1/2 tsp of vegetable bouillon and stir until dissolved.  Put into the small saucepan over medium high heat.  Add the orange juice, lime juice, and honey.  Bring to a boil, then simmer for 2 minutes until it starts to thicken slightly.  Add the tablespoon of butter and mix once melted.
  4. Once the quinoa is done cooking, add the citrus sauce to the quinoa.  Stir to mix well.  Continue to simmer until sauce is absorbed.
  5. Enjoy!
