Weekly Check-In

Cooking Light Annual Challenge Rundown:
Thursday: Chipotle (so worth the risk of vomiting and/or shatting out my guts.  It was so good).
Friday:  Velveeta Mac and Cheese (ugh) with Cheese Dogs.  So this is (obviously) not a part of the Year of Cooking Light Challenge.  This is my hubby (let’s just call him Artemis) making dinner.
Saturday: Southwestern Rice Cakes
Sunday: Smothered Green Chile Pepper Chicken (would have likely been amazing if the bagboy at the grocery store hadn’t given all my cheese to the lady checking out in front of me.  Melted Kraft singles American cheese in no way holds up to the flavor of shredded mozzarella cheese.  My chicken was more strangled to death by processed foods than smothered)
Monday: Turkey and Bean Chili (look for this recipe coming soon to the Cooking section of the site.  It was delish)
Tuesday: Sweet and Sour Tofu-Veggie Stir-Fry (still not sold on the tofu trend yet.  It has no taste!  In this case, it tasted like sesame oil.  Ugh)
Wednesday: Seared Steak Tacos with Blistered Serranos and Browned Onions (do not be lazy on this one.  Take the time to remove the seeds and veins from the serranos.  I lit my mouth on fire with this recipe)
Thursday: Artemis’s cheat night
Friday:  Blackened Chicken and Grilled Avocado Tacos
Saturday: Zucchini and Cheese Quesadillas (look for this recipe coming soon)

Progress on the Trail:
Sunday, 8 January: 8.6 miles
Monday, 9 January: 7.5 miles
Tuesday, 10 January: 8.0 miles
Wednesday, 11 January: 7.5 miles
Thursday, 12 January: 0
Friday, 13 January: 0
Saturday, 14 January: 17 miles (oh Lord)

Week Two Total: 48.6 miles
Distance to Go: 
2,094.9 miles (2,190 miles total)
I just realized 2,190 is perfectly divisible by 365.  6 miles per day average.  No sweat!  @.@
